DJ BBQ's Tostada & Chicken Platter

I went to DJ BBQ's House... He Cooked His Momma's Tostadas!!!

DJ BBQ is one of the OGs of the UK BBQ scene, and if you don't know him... you need to!


I visited him at home in Nottingham and got to hang out with him and his wonderful family. He did what DJ BBQ does... he lit a couple of BBQs, he cooked and he entertained... I'm starting to find it hard to believe that I get to call this work!!!


He made his mum's tostada recipe which would be an unbelievably simple starter to any BBQ - but he served it up on a platter, with pickle juice-brined chicken thighs, a blackened watermelon and feta salad and coal-roasted vegetables.

The tostadas were genuinely incredible - super fresh, packed with flavour and pretty healthy... if you're willing to look past the deep frying!


I've made the pickle-brined chicken a couple of times already, the acidity of the pickling liquor tenderises the meat and you get just a little hint of the pickle flavour... awesome for something different.


And the veggie dishes have gone instantly into my rotation - the coal roasted veggies are a really safe side dish whereas the watermelon salad is one that really stands out as something a bit different.
